It is very easy to make a batch of polenta into a satisfying dish for lunch or dinner. All you need to do is add a few simple ingredients.
To make this kale polenta dish, puree some kale and fresh basil in a food processor.
Make a batch of polenta over the stove top using the recipe on the box.
When it is thick and ready, stir in the pureed kale/ basil mixture and add 1/4 cup of grated parmesan cheese.
Season with salt and freshly ground pepper.
Press into a small casserole dish and put it in the fridge to set for 30 minutes.
Meanwhile, chop some cherry tomatoes and basil. When the polenta is firm, top it with the tomatoes and a red pepper bruschetta sauce and warm the casserole in the oven.
Sprinkle with a little more parmesan and serve!
