Healthy Berry Crumble

Healthy Fruit Crumble / makes 4 servings

I love a fruit crumble! (You don’t have to worry about making a complicated crust). They are so easy to make and they are a great dessert for summer when fresh fruit is plentiful. I like to add some extra health benefits to the crumble by adding flax, hemp and chia seeds to the oat mixture, as well as pumpkin seeds and walnuts. I also keep the sweetness level low – but you can adjust that according to your personal taste. (or use no sweetener at all)

Put 4 cups of fresh fruit in a bowl. If using berries you can keep them whole. If using peaches, apricots or apples, you need to cut them into bite size chunks.

Divide the fruit evenly into four ramekins. Drizzle honey on top – if desired. (I also sprinkled each bowl with some dried cranberries for texture, but that is optional)

In another bowl add the crumble ingredients:

  •  1 cup of oats
  •  2 TB. mixture of flax, hemp & chia seeds
  •  3 TB. of pumpkin seeds
  •  1/4 cup of raw sugar (or sweeten to taste)
  • 1/4 cup of shredded coconut
  • 1/3 cup of chopped walnuts
  • 1/4 cup of coconut oil or 1/4 cup of butter

Spoon the mixture over each fruit ramekin.

Add a dash of cinnamon on top of each – then put the ramekins on a baking pan. Bake at 375 degrees for 20 – 25 minutes.

Serve warm from the oven with a scoop of coconut ice cream or yogurt. Your guests will be impressed, and they will never guess how easy this is to make!
