Heirloom Tomato & Burrata Cheese Caprese Salad

Caprese salad is a simple Italian salad combining tomatoes, fresh mozzarella and basil. It is very simple and easy to make, and is a great summer dish when fresh basil is so easy to grow. I used Burrata cheese on mine which has such a wonderful creamy texture. It is an Italian cheese with a mozzarella shell and a soft mozzarella and cream center, and it is delicious!

First rinse your fresh summer heirloom tomatoes. Actually any ripe sliced tomatoes from the garden or local produce stand will work as well! (I just love the colors and shapes of heirloom tomatoes!)

Always use fresh basil – (from the garden preferably!)

Cut your tomatoes in half and arrange on your plate. Place some basil leaves around the tomatoes.

Drain the Burrata on a paper towel.

Place the cheese on top of your tomatoes and drizzle with extra virgin olive oil and balsamic reduction, (or balsamic vinegar).

Slice some basil strips and arrange them on top. Add a few twists of freshly ground pepper and sea salt & serve!
