Father’s Day Blueberry, Peach & Plum Clafoutis

Clafoutis is a French dessert (or breakfast dish) that is baked in a skillet or pie pan. It is usually made with pitted black cherries, but any type of fresh ripe fruit may be used.

It has a an eggy flan-like texture, and is a delicious way to use fresh fruit. It is very simple to make, but it is also elegant and versatile. It would make a wonderful Father’s Day breakfast!

I made this clafoutis gluten free, which is really pretty easy since there is very little flour in it anyway.

Clafoutis  (serves four)

mix together the wet ingredients in a small bowl:

  • 4 eggs whisked until blended well
  • 1 cup of almond milk (or any milk)
  • 1 Tb. of vanilla
  • 1/2 teas. of almond extract

Stir the beaten eggs in with the milk mixture.

In a bigger bowl mix together the dry ingredients:

  • 1/3 cup of almond flour (or any flour)
  • 1/3 cup of oat flour (or any flour)
  • 1/4 cup of raw sugar

Mix the dry and wet ingredients.

Arrange the fresh fruit in a pie pan or skillet.

  • I used:
  • 1 pint of blueberries.
  • 1 large sliced ripe peach
  • 2 sliced red plums

Pour the egg / flour mixture over it.

Bake at 350 degrees for 30 – 40 minutes. (or until golden and the center is firm to the touch)

It will puff up in the oven and then quickly flatten out.

Clafoutis is best served while still warm – (add a dash of cinnamon & coconut milk if desired).

It has very little sugar and lots of fresh fruit, so it is actually quite healthy –

and Dad will love it!
