One of my favorite things to make is a fruit and nut toast topper. (Or as they call them in Italy; crostino or bruschetta.) They can be eaten any time of day, but they make a satisfying and healthy breakfast.
There are so many variations – you can mix it up with whatever ripe fruit is in season. Any type of good toasted bread works; sourdough, french, pita, english muffins – or even gluten free bread. I use the toaster or lightly brush with oil and grill the bread in a pan first. Nut butters or ricotta, and nuts and seeds add some nice protein to get you through the day. Then choose your fruit.
This peanut butter & banana topper is one of my favorites. It is such a delicious combination. The raisins and sunflower seeds added a nice crunch and sweetness. I drizzled it with honey, and sprinkled flax seeds on top. It makes a healthy breakfast!
Cherries make a wonderful topping for breakfast toast. I made this one on a toasted muesli pita round topped with ricotta cheese, sprinkled with coconut, gogi berries & pistachios.
Here is another favorite breakfast topper. It is toasted wheat sourdough bread spread with almond butter & topped with ripe strawberries, juicy figs and pistachios, almonds & gogi berries.
I love the taste of a juicy peach on toasted bread. This one is spread with cream cheese first, then topped with peaches, cherries, black berries & blueberries. A sprinkling of flax & chia seeds and a drizzle of honey finish it off perfectly!
Here is a tropical twist on toasted spelt morning bread. It is topped with sliced kiwis and bananas, then sprinkled with pomegranate seeds, almonds, cashews and hemp seeds.
This time of year when strawberries are plentiful, try them sliced on toast. This one is on toasted french bread, spread with ricotta, topped with sliced berries, spearmint and pistachios & drizzled with honey. Yum!
