Walnut Butterball Cookies with a Chocolate Mint Center

Everybody has a special cookie that they remember making each Christmas. In our family it was a “Butterball Cookie”. Some people refer to them as Mexican wedding cookies. Butterball cookies are nutty, buttery, light & delicious and they melt in your mouth. Just as you bite into the crumbly buttery texture you get a chocolate mint filling. This is the perfect Christmas cookie indulgence!

Traditionally they are rolled in powdered sugar after baking. In my family we added our own twist by wrapping the dough around a Hershey Kiss, then we decorated the cookie with icing and crushed peppermint. You can use any kind of Hershey’s Kiss inside – and there are many available now, but our family favorite is the dark chocolate covered mint truffle.

INGREDIENTS:

  • 1 cup of butter (2 sticks softened)
  • 1 teaspoon of vanilla
  • 2/3 cup of confectioners sugar
  • 2 1/4 cups of flour
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of baking soda
  • 1 cup of walnuts finely chopped
  • Hershey Kisses

Mix together the butter and the vanilla in a small bowl. In a larger bowl combine the dry ingredients. Stir them both together until smooth and creamy. Put the batter in the refrigerator to chill for about a half hour.

Scoop a spoonful (about a tablespoon) of batter and wrap it around a Hershey Kiss. Roll it into a ball.

Place the balls on a greased baking sheet and bake at 325 degrees for about 10 – 12 minutes, until slightly golden.

When they are done place them on a paper towel with a spatula. You can roll some of them in the traditional confectioners sugar, if desired.

Or you can ice them with a confectioner sugar icing as we do.

Make the icing using confectioners sugar, a dash of cream (not too much) and a drop of food coloring. Stir until smooth.

Spread the icing lightly over the tops of each cookie. Before the icing hardens sprinkle each cookie with chopped peppermint candy cane bits, or sparkling colored sugar.
