Tomato, Zucchini & Basil Frittata with Mozzarella

Tomato, Zucchini & Basil Frittata with Mozzarella

There is nothing like a good frittata for brunch on the weekends. In fact they are a great idea for any meal - breakfast, lunch or dinner! Since I am in the Hamptons this weekend and the weather is mild, I planned a frittata to remind me of summer. I made one of my favorite combinations; tomato, zucchini and fresh basil with mozzarella cheese. Just breathing in the smell of the fresh basil makes me dream of the herb garden, tomatoes just off the vine, and the warm weather to come.... Frittatas are really…
Mexican Fiesta Pasta

Mexican Fiesta Pasta

I was in the mood for a Mexican meal, so I picked up certain ingredients at the market that I might be able to use. I was trying to figure out something to make besides tacos - possibly a meal to make for Superbowl Sunday. Roasted Cauliflower Steaks Topped with Vegetables & Grated Cheddar

Roasted Cauliflower Steaks Topped with Vegetables & Grated Cheddar

Roasted Cauliflower steaks are a delicious way to eat cauliflower and they are really easy to make. It's a wonderful way to prepare cauliflower in a slightly different, but very healthy and colorful way. First cut a cauliflower in 1 1/2 " thick lengthwise slices with a large knife. Next slice and chop some vegetables that will be added on top. I used red, orange and yellow peppers, red onion, red cabbage and cherry tomatoes. (You can really use any combination of vegetables you like). Put the chopped vegetables in a bowl and…
Vegetarian Black Bean Tacos with Lime Crema

Vegetarian Black Bean Tacos with Lime Crema

Everyone loves Mexican food, especially tacos! There are so many ways to make them, but it is really just a matter of assembling the ingredients you like over a tortilla. This is my recipe for Vegetarian Tacos with Refried Black Beans. Beans are a great source of fiber and protein and are a delicious and tasty addition to vegetarian tacos. I like to use corn tortillas for a more authentic Mexican flavor. You will need a can of beans, some shallots or an onion and a garlic. I prefer black beans, but pinto beans…
