Golden Beet Fritters with Fresh Mint, Feta & Lemon Sauce

Golden Beet Fritters 

These are easy to make, they just take a little grating of the beets to prepare. Of course you can use red beets too, but I love the beautiful color of the golden beets. The feta, mint and lemon add a nice refreshing and light flavor!

     For the Fritters:

  • 2 medium beets, peeled and grated
  • 2 -3 sliced & chopped baby red onions (or 1/4 of a red onion)
  • 1/4 cup flour
  • 1 egg, beaten
  • 1/3 cup crumbled feta cheese
  • 2 Tbsp chopped fresh mint
  • one lemon
  • lemon zest
  • salt & pepper to taste

Wash the beets and peel them, then grate with the wider part of the grater.

Put the grated beets and sliced red onions in a bowl with 1 teaspoon of salt. Mix well and let sit for 5 minutes. Using a paper towel squeeze out the excess liquid. Squeeze 1/2 of the lemon & the the rind over the beets & onions. In another small bowl mix the beaten egg and the flour.

Mix both bowls together and lightly stir well with a fork. Add the feta cheese and the chopped mint and blend into the beet mixture.

Form into four flattened patties and place on an oiled flat skillet.

Fry until lightly golden and crispy on one side, then turn once until both sides are golden brown.

For the Lemon Sauce:

In a small pan mix a few TB. of butter with a few TB. of flour and blend over low heat until smooth. Add the other half of the lemon juice and season with salt & fresh ground pepper. Blend until smooth.

Serve the fritters warm, topped with the lemon sauce and some more feta crumbles. Garnish with fresh mint leaves.

Add a few twists of fresh pepper and some salt if desired.
