Vegetable Lasagna with Lots of Vegetables!

Everyone loves a good lasagna, and there is nothing like one that is made with lots of fresh vegetables. It’s hard to beat layers of noodles, ricotta, marinara, melting cheeses and vegetables! I prefer my lasagna with more layers of vegetables and less layers of noodles, so here is my “Vegetables Lasagna with Lots of Vegetables” Recipe.

Ingredients:

(4 servings – double for a larger group)

  • lasagna noodles (1/2 the package – cooked to instructions and drained)
  • 1 1/2 cups of marina sauce (your favorite marinara sauce from a jar)
  • 1 small zucchini sliced
  • 1 medium tomato sliced
  • 1/2 red onion sliced
  • 1 – 2 portabella mushrooms sliced (or any mushrooms)
  • a handful or two of kale or spinach
  • 1/2 TB. of olive oil
  • fresh herbs chopped (sage, thyme, oregano, rosemary)
  • 1
  • 1 1/2 cups of ricotta cheese
  • 1 egg
  • 1 – 2 cups of grated mozzarella cheese
  • 1/2 cup of grated parmesan cheese

Mix together in a bowl the ricotta, the egg, and 1/4 cup of grated parmesan cheese, salt & fresh pepper.

Lightly saute the sliced onions, zucchini and mushrooms in olive oil and set aside with the fresh sliced tomatoes.

Mince the fresh herbs and set aside.

To assemble the lasagna:

Pour 1/4 cup of marinara in the bottom of a baking dish. Cover with a layer of cooked, drained lasagna noodles. Spread some more marinara over the noodles. Put a large spoonful of the ricotta mixture on each serving. Add half the vegetables and herbs, and a some spinach or kale, then top with the cheese.

Repeat the layer again with the marinara, the ricotta, the rest of the vegetables, herbs, spinach, cheese and then add one more layer of lasagna noodles on the top. Spread the remaining cheese and some extra herbs over that. (I reserved a few vegetables to add to the very top for color before putting it in the oven).

Bake at 350 degrees for 40 minutes until bubbly and the cheese is slightly golden.

Let sit for 5 – 10 minutes before serving.

Top with a few fresh herbs and a little more shredded parmesan cheese before serving.

This vegetable lasagna is so fresh and delicious!
