It’s a dreary, rainy Spring day today in the city, not great for a walk, but the perfect kind of day to bake. I had some ripe bananas around, so what could be better than a slice of warm, fragrant banana bread right from the oven!
2 mashed ripe bananas
1/3 cup of melted butter or coconut oil
2 eggs lightly beaten
1/2 cup of maple syrup or honey
1 teaspoon of vanilla
1/4 cup of milk (almond, regular or coconut milk)
Preheat oven to 350 degrees.
Mash the bananas in a small bowl with a fork.
Whisk the other wet ingredients together in a medium bowl.
Stir the mashed bananas into the mixture.
In another bowl mix together the dry ingredients.
1 1/2 cup of flour (I used half whole wheat & half white flour)
1/4 cup of rolled oats
1 teaspoon of baking soda
1/2 teaspoon of salt
1 teaspoon of cinnamon
1 cup of blueberries
Stir the wet ingredients in with the dry ingredients and stir in the blueberries.
Pour the batter into a bread pan, or two small cake pans as I did. I cut some extra bananas on top for decoration and then sprinkled the top with some more cinnamon and oats.
Bake at 250 for about 50 – 60 minutes. (or until a knife inserted in the center comes out clean).
Serve warm with a pat of butter. (I tossed some coconut chips on top for decoration.)
