This is a wonderful and refreshing summer salad and it is very simple to make too. If you have a mandolin slicer it makes it especially easy to shave the vegetables.
Yellow summer squash and zucchini are easy to grow in a summer garden, and this is a great way to use them when you have a lot of squash that you don’t know what to do with. They are almost aways abundant at the farm stands too.
Most recipes for summer squash cook them, but thinly shaving the squash like this works for a salad. The lemony marinade soaks into them more easily.
This Summer Squash Salad is served chilled and the mint and lemon give it a refreshing, summery flavor!
Ingredients: (serves four)
- 1 medium zucchini
- 1 -2 small yellow squash
- 3 – 4 radishes
- 1/2 red onion
- fresh mint
- 1/4 cup of feta cheese
- 1 lemon
- 1/4 cup of olive oil
- salt & pepper
Using the mandolin shave all the vegetables and set aside. (Be very careful when the vegetables get close to the end because the blade is sharp and it is easy to slice your fingers!)
Place the shaved vegetables in a flat bowl and let marinate in the lemon juice and olive oil.
Artfully arrange your salad with the squash ribbons, radishes & sliced onions and some chopped mint. Pour the extra marinate on top. Sprinkle with the feta crumbles and more fresh mint leaves and season with salt & pepper.
Serve chilled alongside some grilled summer food – it makes a delicious combination.
