Heirloom Tomato & Beet Salad with Feta Cheese & Herbs

I love tomatoes, especially the beautiful colors of heirloom tomatoes. I cannot wait to pick them from my own garden this summer! But my local market had a wonderful selection now, so I decided to create a salad with the tomatoes, some sliced beets, radishes & fresh herbs, just to get into the summer mood.


First wash your tomatoes and radishes and then slice them. After peeling and slicing the beets, simmer them in a pan until tender.


While the beets are cooling, you can make a vinaigrette to pour over the salad when you are finished assembling it.

  • Dijon Vinaigrette:
  • 1/4 cup of extra virgin olive oil
  • 1 TB. of dijon mustard
  • 1/4 cup of white wine vinegar
  • a drizzle of honey
  • salt & fresh ground pepper to taste


Arrange the tomatoes, beets & radishes “artfully” on a platter. (this is the part I love!) I have pots of fresh herbs growing outside so I went out and picked some aromatic basil, thyme, oregano and parsley and arranged them on top. (the smell is so good!) Then I crumbled some feta cheese over everything.


Serve the salad with the dijon dressing drizzled over each plate as you serve it.


This tastes like summer on a plate!
