Blueberry & Peach Cobbler

There is nothing like a cobbler in the summertime. It is a wonderful way to use up some of the amazing seasonal fruit that is at the farm stands and it makes the perfect summer dessert. I has some peaches that were grown in the North Fork. They were not quite ripe and I needed them for a family dinner the next day. The guy at Bhumi Farms told me to keep them in the brown bag overnight and they would ripen.

He was right – the next day they were perfect!

Cut the peaches up into slices until you have about 4 cups (about 6 peaches). I added some torn mint for flavor.

I put the peaches in a bowl with a cup of blueberries and 1/4 cup of sugar. I added a tablespoon of flour (to thicken it), 1/4 teas. of cinnamon and the juice of a half of a lemon.

Pour this mixture into a 9″ baking dish or a pie pan. Meanwhile you can prepare the cobbler topping which is really much like a biscuit.

For the Topping:

  • 1 cup of flour (I used 1/2 whole wheat and 1/2 all purpose)
  • 1/2 cup of sugar
  • 1 teas. of baking powder
  • 1/2 teas. of salt
  • 3/4 of a stick of butter (cut into small pieces)
  • 1/4 cup of boiling water

** Mix the top five ingredients together in a bowl cutting in the butter. Pour the hot water in and gently mix together.


Drop the cobbler topping onto the peach mixture by large spoonfuls.

Bake at 400 degrees for about 30 minutes or until the topping is golden brown and the fruit is bubbling.

Serve while warm topped with vanilla ice cream.
