Cauliflower Mashed Potatoes

Have you ever had cauliflower mashed potatoes? They are delicious and have less carbohydrates than regular mashed potatoes. Cauliflower has many health benefits including, vitamins, minerals and antioxidants which is an added benefit. It is also a very easy side dish to prepare and is a great way to use this delicious, healthy vegetable!   (Keep it in mid as a side to your Thanksgiving table also).

First you need a nice big head of fresh cauliflower.

1 head of cauliflower
3 tablespoons milk or cream
1 tablespoon butter
2 tablespoon of olive oil
2 tablespoons light sour cream
1/4 teaspoon salt
freshly ground black pepper
1/4 cup thinly sliced green onions
Top with:
* 1/3 cup of grated aged gouda cheese. (this is optional, but gives it a delicious flavor)
*   fresh chopped herbs or chives
* smoked paprika
* butter or sour cream
* extra salt & fresh ground pepper


1. Separate the cauliflower into florets and chop the core.

2. Bring a few cups of water to a simmer in a pot, then add the cauliflower. Cover and turn the heat to medium. Cook the cauliflower for 12-15 minutes or until tender.

3. Drain and discard all of the water (the drier the cauliflower is, the better) and add the milk, butter, olive oil, sour cream, salt and pepper and mash with a masher or (immerser stick) until it looks like “mashed potatoes.”

Top with toppings and serve while still warm, or reheat until warm.

Possible Toppings:

sliced green onions, or chives, smoked paprika, salt, fresh ground pepper, grated gouda, butter, sour cream

I loved this – it was so good I had seconds!!  It is an easy, healthy & delicious side dish to any meal.
