Brioche French Toast With Summer Fruits & Lemon Ricotta

French toast is one of those things I always forget to make, but it is really so delicious and easy!  I tend to choose waffles, or pancakes for a special breakfast, but my husband loves French toast because his mother used to make it for him, so I decided to give it a try again. I added fresh fruit and lemon ricotta as a topping to mine. They both add nutritional value and color to the meal. Fresh fruit is a healthy choice and the eggs & ricotta are both a good source of protein.

You can use any kind of bread, but brioche bread makes a light, airy French toast that absorbs the egg mixture well. Any type of summer berries or fresh fruit works well as a topping.

For the fruit:

1 – 2 cups of sliced summer fruit  (I had just made a trip to a farm stand, so I used a mix of cut-up fruit)

Slice and set aside your fruit until the French toast is hot off the stovetop and ready to serve.

For the French Toast:

(this recipe was just for 2 – just double or triple for more servings)

  • 4 thick slices of brioche bread (I used 2 brioche rolls, sliced off the ends and cut them in half lengthwise)
  • 2 large eggs
  • 1/2 cup of milk
  • 1 teaspoon of vanilla
  • 1/8 teaspoon of nutmeg
  • 1/2 teaspoon of cinnamon
  • 1 TB. of sugar or honey
  • mix together well in a flat dish that works for soaking the bread.

Soak the bread in the egg / milk mixture for 2 minutes on each side. (you want it to soak in but not get too soggy)

For the Ricotta mixture:

  • 1/2 – 3/4 cup of ricotta cheese
  • 1 TB. of sugar or honey
  • grated rind of one lemon
  • 1 TB. of lemon juice

* stir together well to combine all the ingredients

* this lemon ricotta mixture gives it an almost cheesecake like taste with I love!

Melt a few TB. of coconut oil or butter, (or a mix) in a flat skillet. Cook the soaked bread for a few minutes on one side until golden brown, then flip. When they are all nice and golden, arrange the toasts on plates and top with pats of butter, and a few dollops of the ricotta mixture. Spread spoonfuls of sliced fruit over everything, and drizzle with maple syrup. The French toast is ready to serve!

French toast is so delicious and simple to make and it is a great way to use fresh summer fruit. After trying it again using brioche bread and the lemon ricotta, I will definitely make it more often.  (by the husband loved it!)
