Mini Frittatas with Veggies, Cheddar, Herbs & Pesto

I love to make a frittata for friends and guests for brunch. It can be served hot, warm or even room temperature and is wonderful with a side of greens, toast and fruit. Everyone loves a frittata and it is the perfect way to start the day!

Usually I bake it in a large rectangular or oval pan and let everyone serve themselves. But these mini frittatas are fun individual little servings that are made the same, but baked in a muffin tin. You can use a regular muffin tin (twelve muffins), or a large muffin tin (six muffins) depending on the size you prefer and what else you are serving.

Ingredients for the Frittata:

(six servings)

8 eggs

1/2 cup of milk

1 cup of cheddar cheese (grated)

1 – 2 shallots (thinly sliced)

1 cup of cherry tomatoes (cut in half)

1 small zucchini (thinly sliced and quartered)

1 cup of small mushrooms (sliced)

1- 2 TB. of olive oil  (to saute the vegetables in)

1/2 cup of chopped fresh herbs (I used basil, oregano, chives, thyme, parsley – but any one is fine)

salt & fresh ground pepper


1 cup of fresh basil

1/4 cup of olive oil

1/4 cup of parmesan

2 TB. of pine nuts or walnuts

1 garlic clove

* prepare the pesto in a food processor. (or use a pre-made pesto sauce to make it easy!) Set aside.

* Saute the chopped vegetables & herbs in a little olive oil until lightly cooked and slightly golden. Set aside.

* Put the eggs and milk in a medium bowl and whisk until well blended. Add half the cheese (1/2 cup). Butter the muffin pan and pour the egg mixture evenly into each muffin tin until about 3/4 full. Add half the chopped sauteed vegetables and put in a 375 degree oven. After the egg starts to cook around the sides (about 5 minutes) add the rest of the vegetables & herbs and top with the rest of the cheese. Cook for another 10 minutes or so until golden and firm in the middle.

Using a knife around the edges, remove each little frittata from the pan. Serve topped with a drizzle of the pesto, extra herbs, salt and fresh ground pepper.

With a side toasted bread and a few fresh greens, this is a perfect brunch for your family or guests. They will love it!
