Succotash is kind of an old fashioned vegetable dish that is a mix of corn and lima beans. But now that lima beans and fava beans are making a comeback, I thought it would be nice to create a more "updated version" adding more colorful vegetables in my succotash. One Dish Quinoa with Veggies and Crispy Garbanzos

I like to make a batch of quinoa every week to have on hand for making a quick meal. It really is a "super food" loaded with protein, vitamins and minerals. When I lived in Connecticut one of my favorite restaurants was Paul Newman's Dressing Room in Westport. I was always very impressed with the "Spoon Salad" that was on the menu daily. The appeal for me was the variety of seasonal produce used, which was chopped into small bite size pieces.
