One Dish Quinoa with Veggies and Crispy Garbanzos

I like to make a batch of quinoa every week to have on hand for making a quick meal. It really is a "super food" loaded with protein, vitamins and minerals. This one dish meal starts with cooked quinoa. (follow directions on the box) Finely chop and saute in olive oil any vegetables that you have in the fridge.
