Mini Frittatas with Veggies, Cheddar, Herbs & Pesto

Mini Frittatas with Veggies, Cheddar, Herbs & Pesto

I love to make a frittata for friends and guests for brunch. It can be served hot, warm or even room temperature and is wonderful with a side of greens, toast and fruit. Everyone loves a frittata and it is the perfect way to start the day! Usually I bake it in a large rectangular or oval pan and let everyone serve themselves. But these mini frittatas are fun individual little servings that are made the same, but baked in a muffin tin. You can use a regular muffin tin (twelve muffins), or…
Colorful Cold Summer Vegetable Pasta Salad

Colorful Cold Summer Vegetable Pasta Salad

Cold pasta salad is a great summer dish to bring to a picnic or barbecue. You can make a giant bowl of it and add any summer vegetables you like. Basically it is cooked pasta with fresh crunchy vegetables tossed with a little mozzarella cheese and a dressing, so it is simple to make. I prefer a light dressing that is not too creamy and rich. Pasta salad can be eaten on it's own alongside other dishes, or as a healthy meal itself on a big bed of greens. Ingredients:  (any summer vegetables…
Roasted Asparagus with Red Pepper Relish & Poached Eggs

Roasted Asparagus with Red Pepper Relish & Poached Eggs

This is a dish that is very easy to make and is a nice way to use one of those a big bunches of fresh asparagus in the markets this time of year. It retains the wonderful taste of the spring asparagus by simply adding a red pepper relish and a lemony yogurt sauce to bring out the flavor. Poached eggs add the final touch, although it is delicious without them as well. Ingredients: 1 bunch of fresh asparagus (trim several inches off the tough ends) for the relish: 2 - 4 TB.…

Most of my instagram followers know me as LorindaBreeze, someone who makes healthy, colorful food and then instagrams it! They don't know that this is a hobby for me and that illustrating and writing children's books has been my career. I went to the Rhode Island School of Design many years ago, and studied painting…
Pasta Primavera

Pasta Primavera

Pasta Primavera is a pasta dish that originated as a way to celebrate the earliest spring vegetables. In fact "Primavera" means springtime in Italian. You can choose whatever combination of vegetables that you like. I used asparagus, broccolini, cherry tomatoes, yellow squash, orange bell pepper and ramps. Snow peas, fava beans, fresh peas and carrots are also great additions to Pasta Primavera. (I couldn't find fresh peas so I substituted shelled edamame). This dish is often prepared with a rich creamy sauce, but I prefer to make it with a bright citrusy lemon…
