Homemade Garden Vegetable Soup

Homemade Garden Vegetable Soup

Vegetable soup is a wonderful way to eat a lot of healthy vegetables, and this time of year it tastes so warming and delicious too.  I like to make a pot and eat it for for dinner that night - then again for lunch the next day. (and maybe the next too!) With a little grated parmesan on top and some toasted bread it makes a very satisfying and healthy meal! This is not so much a recipe, but a reminder of how simple soup can be to make.  For vegetable soup with…
Orecchiette with Broccoli Rabe, Ricotta & mixed Vegetables

Orecchiette with Broccoli Rabe, Ricotta & mixed Vegetables

This is an easy one dish meal with everything you need all on one plate - my favorite kind of meal! It is basically just a pasta dish with sauteed vegetables & ricotta, with broccoli rabe as the main ingredient. Broccoli Rabe is a cruciferous vegetable that looks a lot like broccoli. The leaves, buds and stems are all edible, but the leaves tend to be a bit bitter - (but in a good way) - so use as desired. The bitterness is mellowed out by the pasta and ricotta. Other vegetables I…
Spicy Vegetarian Chili with Kabocha Squash

Spicy Vegetarian Chili with Kabocha Squash

I love a warming bowl of spicy vegetarian chili on a cold day. The weather is just now beginning to feel "fall like", so I got in the mood to make it! I had recently bought a nice Kabocha Squash at the farmers' market so I decided to add that to my chili. Kabocha Squash is incredibly dense and sweet when roasted. (You can substitute any squash actually, like Butternut, Acorn or Delicata. If you want to make this recipe even easier, get the already cubed Butternut Squash at the market). Ingredients: (makes…
Baked Apples with Oats & Caramel Sauce

Baked Apples with Oats & Caramel Sauce

One of my favorite things about Autumn are the fall apples - there is nothing better! The crisp flavor & tartness is a whole different thing than an apple any other time of year. Since you can only eat so many, I am always searching for good recipes using fall apples. My last post was a Caramelized Apple Dutch Baby.  This one is a simple recipe for Baked Apples. They are really very easy and a warming alternative to a fresh apple.  They actually taste like apple pie without the fuss of a…
Caramelized Apple Dutch Baby

Caramelized Apple Dutch Baby

When my children were young we always went apple picking in the fall. It was one of our favorite memories!  We would come home with bags of crisp, tart apples. There is nothing like biting into a fall apple from New England or New York!  Then we would proceed to make as many recipes using them as we could think of - apple pies and apple crisps of course. With the last bunch we would always make apple butter to use later on with our peanut butter sandwiches instead of jelly. This Caramelized…
