Muesli originated in Switzerland in the beginning of the 20th century. It was created by Dr. Bircher-Benner as a breakfast designed to ensure that his patients had a healthy start to the day. 3/20/15 Spring is officially finally here! It is pretty exciting to see the first true signs of it appearing in Central Park after the long cold winter we all went through. Quinoa Tabouli Salad

Tabouli (Tabbouleh) is a wonderful Mediterranean dish that has a nice mix of crunchy vegetables and delicious flavors. I made mine by substituting the bulgur with cooked quinoa to add to the nutritional value. The mint adds just the right zest to the salad. Ingredients: cooked quinoa chop: cucumbers tomatoes red onion radishes orange & yellow peppers black olives fresh mint Mix the chopped veggies into the cooked quinoa. Arrange on a bed of arugula. Sprinkle with feta cheese crumbles, olive oil, fresh squeezed lemon juice and salt & pepper.

The snow has melted in Central Park and it looks like Spring is finally on it's way! There are even new shoots poking their way through the ground at the Central Park Conservatory Garden. It almost makes you forget the long winter we just had! This mild weather has inspired me to try some new spins on old favorite salads of mine.
