This is a simple, but satisfying salad for the winter months. The only real planning is roasting a squash ahead of time and letting it cool a bit. You can make it easier on yourself by getting already cut up butternut squash that you can find in the markets. Or you can do it yourself by first peeling the squash. It has been awhile since I have actually illustrated a children's book. But you never know, there still may be a book or two in my future. There is always one brewing in my mind, that is for sure.
