Quinoa Tabouli Salad

Quinoa Tabouli Salad

Tabouli (Tabbouleh) is a wonderful Mediterranean dish that has a nice mix of crunchy vegetables and delicious flavors. I made mine by substituting the bulgur with cooked quinoa to add to the nutritional value. The mint adds just the right zest to the salad. Ingredients: cooked quinoa chop: cucumbers tomatoes red onion radishes orange & yellow peppers black olives fresh mint Mix the chopped veggies into the cooked quinoa. Arrange on a bed of arugula. Sprinkle with feta cheese crumbles, olive oil, fresh squeezed lemon juice and salt & pepper.

Simple Vegetable Pizzas on Sprouted Wheat Tortillas

One of my favorite quick and easy thing to make for lunch or dinner are simple pizzas on tortillas. You can use wheat, corn, or gluten free ones. The toppings are what makes them, and you can customize them to your individual taste and what you have on hand. For these I kept with an Italian theme. I happened to have mushrooms, peppers, shallots, and basil in the fridge. I lightly sauteed these over the stove with a touch of olive oil. Then I spread the tortillas with some red pepper bruschetta topping.…

There are many Greenmarkets to shop at that carry locally grown produce such as papayas, pineapples and avocados, apple bananas and mangos, as well as many other fruits and vegetables. They also carry a beautiful array of tropical flowers like Orchids, Bird of Paradise, Hibiscus, Plumera and Anthurium. My sister has some colorful ceramic dishware and retro Hawaii…
